Have you ever been making a batch of chocolate chip cookies and wondered what they would taste like without the chocolate? Well, that’s exactly what this recipe is — except, you know me, I couldn’t commit to an entirely chocolate-less cookie recipe. So, I decided to cover the bottom of each cookie in semisweet chocolate. In my opinion, it adds just the perfect small, subtle amount of chocolate flavor to every bite. I’m a fan of these!

You may remember that I first teased this recipe back in September 2025, but I pushed them to the back burner since I had other recipe ideas that I was more excited about. That was a mistake by me, because these are definitely a hit. It’s such a fun way to add some variety to your bakes and the best part is, the chocolate dipped bottom is totally optional! If you want a completely chocolate-less cookie, skip the chocolate dipping! These cookies are flavorful and delicious all on their own and I’m confident that you will love them just as much as I do!

Now, since we’re seriously losing some flavor without chocolate, it was a no-brainer for me that these cookies had to have a brown butter base. Without it, I felt like the cookies would be dull and boring which is not what anyone wants.

Brown butter adds such delicious, nutty flavor to every bake. I’m obsessed! Two other components also help elevate the flavor: 1) vanilla bean paste and 2) flaky sea salt. While vanilla extract is totally fine to use in this recipe, vanilla bean paste just boosts the flavor a little bit more. And, that flaky sea salt?! It’s a must. When that flaky sea salt hits your tongue, it’s heavenly and you understand why it’s absolutely mandatory to include.

If you’ve never browned butter before, don’t sweat it, I’ll walk you through the entire process right now.

Place a light-colored saucepan or pot on the stove over medium heat. Unwrap the butter and place it in the pot or pan. Using a light-colored pot/pan is super important here as it allows you to easily see the butter change in color and make sure that nothing burns. The butter will begin to melt. Let it melt fully, stirring frequently to ensure that nothing sticks or burns. Once the butter has fully melted, stop stirring for about 15 to 20 seconds. The butter will begin to bubble. Once it starts bubbling, start stirring again and do not stop. The butter will continue to bubble and get foamy on top as it changes in color from yellow to a golden, amber color. You will also see golden flecks at the bottom of the pot/pan. These are toasted milk solids and are what give the brown butter its delicious, nutty flavor. Pay close attention to the color. As soon as you start smelling that nutty aroma AND the butter is mostly that golden/amber color, remove the butter from the heat. Transfer the brown butter to a heat-safe (please, make sure it’s heat-safe) glass bowl or measuring cup and let it cool for 10 minutes before combining it with the sugars. And, that’s it — you’ve successfully browned butter!

Tips for Success

Measure your dry ingredients correctly! Too much flour will impact the taste and texture of your cookies. You should never scoop up flour directly with a measuring cup. The flour will be compacted and you’ll end up with too much. Instead, take a spoon and run it through the flour to fluff it up and remove any clumps. Then, take the spoon and spoon the flour directly into the measuring cup. Use a flat top tool to level the top and remove any excess flour. Also, just a friendly reminder to use dry ingredient measuring cups when measuring your, you guessed it, dry ingredients.

Let the brown butter cool for 10 minutes before combining it with the sugars. It’s extremely important that you let the butter cool first as hot butter won’t combine with the sugars properly and it’ll impact the texture and look (especially the height) of your cookies.

Go by how the cookies look to determine if they’re done baking. The baking time listed in this recipe is simply a guide. Everyone’s oven is different and oven temperatures can vary. For that reason, you should always go by how your cookies look to know if they should be removed from the oven. If the edges of the cookies are set and lightly golden and the tops of the cookies are mostly set, but a little wet on top, the cookies are done baking! If the tops of the cookies are fully set and golden on top, the cookies are overbaked and they will not be as soft and chewy.

FAQs

Do I have to chill the dough?

Since we’re using melted brown butter in this recipe, I highly recommend chilling the dough in the refrigerator for 30 to 45 minutes. The chill time will help the flavors develop, leading to a more tasty cookie. Chilling the dough will also reduce spreading and help these cookies bake up with some height.

Can I make this dough in advance?

Absolutely! The dough can be made in advance and stored in the refrigerator for up to 3 days. Before baking, set the cookie dough out for about an hour so that it softens and is easier to scoop. Baking temperature and time will remain the same.

Can I make these cookies larger or smaller?

Yes! However, you will need to adjust the bake time accordingly. Baking temperature will remain the same. For smaller cookies, start with a bake time of about 8 minutes, adding 1 to 2 minutes, as needed. For larger cookies, start at 12 minutes and add 1 to 2 minutes, as needed.

Can I swap the melted brown butter for regular melted butter?

No — melted brown butter and regular melted butter are not a 1:1 swap. When butter is browned, it loses some of its water content, resulting in a loss of volume. In this recipe, we actually use LESS than 1 cup of melted brown butter. Instead of adding the water that was lost back in, I adjusted the dry ingredients accordingly to account for that. So, if you were to use regular melted butter instead, the amount of flour this recipe calls for would not be enough.

How to store

Store the cookies in an airtight container at room temperature or in the refrigerator for up to 5 days or freeze for up to 3 months. If storing them at room temperature, be mindful of how hot it is — the chocolate bottoms can melt. If freezing, set the cookies out for at least 20 to 30 minutes so that they soften and come to room temperature before consuming.

Homemade, brown butter, chipless cookies that are topped with flaky sea salt and dipped in semisweet chocolate. They may be simple, but they’re full of flavor and absolutely delicious!

Ingredients

  • 1 cup unsalted butter

  • 1½ cups brown sugar, packed

  • ¼ cup granulated sugar

  • 1 tbsp vanilla extract or vanilla bean paste

  • 2 eggs, room temperature

  • 2¼ cups all-purpose flour

  • 1½ tsp baking soda

  • 1 tsp salt

  • 1½ tsp cornstarch

  • 1½ cups semisweet chocolate chips + vegetable/coconut oil (for dipping)

  • Flaky sea salt

Directions

  • On medium heat, brown 1 cup unsalted butter. Remove the butter from heat when the top is foamy and the butter is amber/golden brown in color. Transfer to a heat-safe glass bowl or measuring cup and set aside to cool for 10 minutes.
  • While the brown butter is cooling, combine 2¼ cups all-purpose flour, 1½ tsp baking soda, 1 tsp salt, and 1½ tsp cornstarch in a bowl and whisk together. Set aside.
  • In a large bowl, add 1½ cups brown sugar, ¼ cup granulated sugar, and the melted brown butter. Whisk together until it is smooth and combined.
  • Add 1 tbsp vanilla extract or vanilla bean paste and 2 eggs. Whisk until the mixture is smooth and lighter/paler in color. I used vanilla bean paste to boost the flavor.
  • Gently fold in the dry ingredients with a rubber spatula. Stop mixing as soon as there are very few (basically none) flour streaks.
  • Chill the cookie dough in the refrigerator for 30-45 minutes. Preheat the oven to 350 degrees Fahrenheit.
  • Scoop out sixteen equally sized dough balls. Line a baking sheet with parchment paper and place the cookie dough balls on the sheet. Place in the oven and bake for 11 to 12 minutes or until the edges are golden and the tops of the cookies still look slightly wet.
  • As soon as they come out of the oven, shape the cookies with a spoon, bowl, or circular cookie cutter. Let the cookies cool completely before covering them in chocolate.
  • Melt 1½ cups semisweet chocolate chips in the microwave in 15-second increments, stirring between each. Add a drop of vegetable or coconut oil to help thin out the chocolate so that it melts evenly.
  • Using a spoon, add chocolate to the bottom of each cookie and spread until the bottom is completely covered. Place the cookies (chocolate side facing down) on a baking sheet lined with parchment or wax paper. Top with flaky sea salt and then place in the refrigerator or freezer until the chocolate has hardened.
  • Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months. *Note: if the environment is hot, the chocolate on the bottom may melt. In that case, store the cookies in an airtight container in the refrigerator.
