Well, hello there! It’s been quite a bit since I published my last recipe. It’s been a busy summer for me, but I’m still baking here and there and coming up with new recipes. During my recent trip to London and Paris, I ate so many amazing pastries and desserts. One of my top favorites was from Le Cafe Nac in London — I tried the crushed milk chocolate cookies with Rice Krispies and soft serve. It was UNREAL. You’re probably thinking, “it’s just ice cream and cookies!” But, no. This dessert was absolutely delicious and I still think about it. The Rice Krispies added the perfect amount of flavor and a little crunch to every bite. So, naturally, I was inspired to make a Rice Krispie cookie.
These cookies are so easy to make and it’s such a fun, different recipe to have on hand to add some variety and spice things up a bit. Now, without further ado, let’s get into the recipe!

Why are the best desserts always a combination of two individual desserts that are amazing on their own? And why did it take me so long to make a Rice Krispies cookie???
Truthfully, it doesn’t matter. All that matters is that I absolutely nailed this recipe. These cookies are full of brown butter flavor, bake up nice and tall, and have a dreamy combination texture: the cookie itself is super chewy, but the addition of those Rice Krispies adds a dreamy crunch to each bite. I’m obsessed!
As I mentioned, we are using brown butter in this recipe. If you’ve never browned butter before, stay right here! I’m going to walk you through the process. If you’re a pro and have browned butter before, you may move along to the next section of the blog post.
Place a light-colored, medium-size saucepan or pot on the stove over medium heat. It’s extremely important to use a pot/pan that is light-colored so that you can see your butter change in color and avoid burning it. Unwrap the butter and place it in the pot/pan and let it melt completely. Stir occasionally to ensure that nothing sticks or burns. Once the butter is fully melted, stop stirring for about 15 to 20 seconds. The butter will begin to bubble and make popping noises. Start stirring again and do not stop stirring. The butter will continue to bubble and get foamy on top. It will also begin to change in color from its original yellow color to a golden, amber color. At this point, you will also begin seeing golden flecks at the bottom of the pot/pan. These flecks are toasted milk solids and are what give the brown butter its delicious, nutty flavor. Once the butter is mostly amber/golden in color and there are a lot of golden flecks at the bottom of the pan, remove the butter from the heat. Transfer the brown butter to a heat-safe, glass bowl or measuring cup and let it cool for 10 minutes before combining it with the sugars. Congratulations — you’ve successfully browned butter!

Ingredients you’ll need:
- Unsalted butter
- Brown sugar
- Granulated sugar
- Vanilla extract
- Eggs
- All-purpose flour
- Baking soda
- Salt
- Cornstarch
- Mini chocolate chips (optional)
- Mini marshmallows
- Rice Krispies / Crispy Rice Cereal
Kitchen tools you’ll need:
- Medium-size saucepan or pot
- Mixing bowls
- Dry ingredient measuring cups
- Spatula
- Whisk
- Cookie scoop – I used the large cookie scoop which holds 3 tbsp
- Baking sheet
- Parchment paper
- Cookie turner
- Cooling rack
Tips for success
Measure your dry ingredients correctly! Use the spoon and level method to measure out the flour. Never, ever scoop the flour up directly with the measuring cup as the flour will be compacted and you’ll end up with too much. Instead, take a spoon and run it through the flour, first. This will help fluff it ip and remove any clumps. Then, take the spoon and spoon the flour directly into the measuring cup. Use a flat top tool to level off the top and remove any excess flour. Also, just a friendly reminder to please use dry ingredient measuring cups for measuring out — you guessed it — dry ingredients. They are NOT the same as a liquid measuring cup.
Let the brown butter cool! Before combining the brown butter with the brown and granulated sugars, let the butter cool for 10 minutes. This is a key step because if the butter is too hot, it won’t combine properly with the sugars and will impact the texture and height of the cookies.
Use the baking time listed as only a guide and not a set rule. There are so many variables when it comes to baking and one of them is oven temperature. One person may be able to bake their cookies in 10 minutes and for another person, it may take them 12 minutes. This is why I always say that the baking time listed is not something to follow strictly. Instead, go by how the cookies look to determine if they’re done baking. If the edges are set and lightly golden and the tops of the cookies are slightly wet (but mostly cooked!), then the cookies are ready to be taken out of the oven. Removing the cookies at this point will ensure that they have the dreamiest texture that’s soft and chewy for DAYS. If the cookies are fully set on top and golden brown, they are overbaked which will impact the texture.
Add any extra toppings BEFORE rolling the cookies in the Rice Krispies. You know me, there’s no such thing as too many toppings. While baking these, I discovered that it’s best to add any extra chocolate chips and marshmallows to the outside/tops of each cookie before you roll them in Rice Krispies. If you try to add them in after, you will lose some Rice Krispies in the process and have to re-roll them.
FAQs
Can I make this cookie dough in advance?
95% of the time, my answer is yes. However, since we are using cereal in this recipe and it has a tendency to get soggy, I do not recommend making this dough in advance and letting it chill in the refrigerator or freezer. The Rice Krispies will get soggy and won’t add that extra flavor and crunch that is needed.
Do I have to chill the cookie dough?
No! Do NOT chill this cookie dough. As I explained in my answer above, chilling the dough will impact the taste and texture of the Rice Krispies. You will need to bake these cookies right away.
Can I make these cookies smaller or larger?
Absolutely! The baking temperature will remain the same, but you will need to adjust the baking time accordingly. For smaller cookies, reduce the bake time by 1 to 2 minutes. For larger cookies, add 1 to 2 minutes to the bake time. As always, go by how the cookies look to determine if they’re done baking.
My cookie dough is a bit tacky, what should I do?
If your cookie dough is sticky and hard to roll into cookie dough balls, gently fold in 1 tbsp of all-purpose flour at a time until you reach the desired consistency. I don’t recommend adding more than ¼ cup (4 tbsps) in total.
How to store
Store the cookies in an airtight container at room temperature for up to 5 days. I’m not sure how freezing the Rice Krispies will impact the cookies as I haven’t tried it myself, so for that reason, I would not recommend freezing the baked cookies.

minutesHomemade, brown butter cookies that are full of mini chocolate chips, mini marshmallows, and Rice Krispies. They have the perfect soft & chewy texture with some added crunch from the Rice Krispies cereal.
Ingredients
1 cup unsalted butter
1½ cup brown sugar, packed
¼ cup granulated sugar
2 tsp vanilla extract
2 eggs, room temperature
2¼ cups all-purpose flour (if needed, add 1 tbsp of flour at a time to reach desired consistency)
1½ tsp baking soda
1 tsp salt
1 tsp cornstarch
½ cup mini chocolate chips (optional)
1 cup mini marshmallows
1 cup Rice Krispies / Crispy Rice Cereal (to be added to the dough)
½ cup Rice Krispies / Crispy Rice Cereal (for rolling the cookie dough balls in)
Directions
- Preheat the oven to 350 degrees Fahrenheit.
- On medium heat, brown 1 cup unsalted butter. Remove the butter from heat when the top is foamy and the butter is amber/golden brown in color. Set aside to cool for 10 minutes.
- While the butter is cooling, combine 2¼ cups all-purpose flour, 1½ tsp baking soda, 1 tsp salt, and 1 tsp cornstarch in a bowl and whisk together. Set aside.
- In a large bowl, add 1½ cups brown sugar, ¼ cup granulated sugar, and the brown butter. Whisk together until it is smooth and combined.
- Add 2 eggs and 2 tsp vanilla extract. Whisk until the mixture is smooth and lighter/paler in color.
- Gently fold the dry ingredients in with a rubber spatula. Then, fold in ½ cup mini chocolate chips, 1 cup mini marshmallows, and 1 cup Rice Krispies,
- Do not chill this cookie dough — bake the cookies immediately or else the Rice Krispies will get soggy. Scoop out 16 equally sized dough balls (I used a 3 tbsp cookie scoop). Add any extra mini chocolate chips and mini marshmallows to the top of each cookie dough ball, then roll each ball in extra Rice Krispies so that they’re completely covered.
- Place the cookie dough balls on a baking sheet lined with parchment paper. Bake for 10-11 minutes or until the edges are golden and the tops of the cookies still look slightly wet.
- As soon as they come out of the oven, shape the cookies with a spoon or bowl. Let the cookies rest for about 5 minutes before transferring to a wire rack to finish cooling.
- Store in an airtight container at room temperature for up to 5 days.
