Thick, gooey homemade Rice Krispies Treats that are loaded with Biscoff cookie pieces and cookie butter.

Homemade Rice Krispies Treats are one of my favorite quick and easy desserts to make at home. But, if you know me, then you know I like to take my favorite classic desserts to the next level and that’s exactly what we’re doing with these. The Biscoff cookie pieces and cookie butter add the perfect amount of flavor that compliments the Rice Krispies so well. Plus, I’ve added in extra marshmallows so that they’re super gooey and easy to pull apart.

Ingredients you’ll need

  • Unsalted butter
  • Mini marshmallows
  • Rice Krispies cereal
  • Biscoff cookies 
  • Cookie butter (Biscoff, Trader Joe’s, or any other brand)

How to make

  1. Grease an 8 inch square pan with cooking spray.
  2. In a large bowl, combine Rice Krispies, 1 cup of marshmallows, and chopped Biscoff cookies.
  3. Over medium heat, melt butter. Then, add remaining marshmallows and cookie butter spread. Stir until just melted.
  4. Immediately combine the marshmallow mixture with the Rice Krispies, marshmallows, and Biscoff cookies.
  5. Transfer to the prepared baking pan and lightly press with a greased spatula or slightly damp hands. 
  6. Let the Rice Krispies set for about 20 minutes before slicing and serving. 
  7. Store in an airtight container for up to 3 to 5 days. These are best when consumed within 1 to 2 days of making.

Tips for success

  • One of the keys to making homemade Rice Krispies Treats that are gooey and easy to pull apart is making sure you do not over-stir your marshmallow mixture. Pay close attention while melting your butter, marshmallows, and cookie butter – as soon as everything is melted and combined, stop stirring and remove from heat. If you over-stir, this mixture won’t have enough elasticity to create a gooey, easy to pull apart treat.
  • Before combining the butter/marshmallow/cookie butter mixture with the dry ingredients, make sure you spray your spatula with cooking spray. This will make the entire process much easier. If needed, spray the spatula again throughout this step so that nothing sticks to it. 
  • Once you have everything combined and in the prepared pan, before you press it down, wet your hands so that they’re slightly damp. Using damp hands, lightly press the treats into the pan – do not smush them down or press into the pan too much.

How to store

Store the Cookie Butter Rice Krispies Treats at room temperature in an airtight container for up to 3 to 5 days. For optimal freshness, consume within 1 to 2 days after making.

  • 6 tbsp unsalted butter

  • 8 cups mini marshmallows, divided

  • 5 cups Rice Krispies cereal

  • 16 Biscoff cookies

  • 3/4 cup cookie butter

Directions

  • Grease an 8 inch square pan with cooking spray. Set aside.
  • In a large bowl, combine Rice Krispies, 1 cup of marshmallows, and chopped Biscoff cookies.
  • Over medium heat, melt butter. Then, add remaining marshmallows and cookie butter spread. Stir until just melted.
  • Immediately combine the marshmallow mixture with the Rice Krispies, marshmallows, and Biscoff cookies.
  • Transfer to the prepared baking pan and lightly press with a greased spatula or slightly damp hands.
